Spinach and egg scramble

 


Ingredients:
  • Spinach 12-16 oz
  • eggs 6-8
  • salt and pepper (optional) 
  • cooking oil
Instructions:
  1. Heat a little oil in a pan. 
  2. Cook spinach until tender and slightly dry
  3. Beat the eggs
  4. Add in the eggs and salt and pepper if using
  5. Cook until the eggs are done.

Apple-Cinnamon Latkes

Ingredients:
  • 2 eggs
  • 3 Tbsp sugar
  • 1 tsp cinnamon
  • 1/3 cup water
  • 3 cups chopped apples (about 3 apples)
  • 1 cup self-rising flour
  • 1/2 cup oil for frying
Instructions:
  1. Cut the apples with an apple cutter.


  2. Place the apples into a food processor and chop.


  3. Put the eggs, sugar, cinnamon, apples, flour, and water in a bowl.
  4. Mix well.


  5. Heat, over medium heat, about 2 Tbsp of oil in a frying pan.
  6. For each latke, spoon about 1/4 cup batter into hot oil. 


  7. Fry until the edges are brown. Turn and fry on the other side. 
  8. Remove from pan and let drain on a paper towel.
  9. Sever while warm.
Notes:
I bought my chopper about 2 years ago. I use it at least 3 times a week. It is still going strong. My husband does sharpen the blades about every 3 months. Here is the link to where I got it. Food Chopper.

Strawberry Fritters

 


Strawberry Fritters are great for breakfast or any time. 

Ingredients:

  • Oil for frying
  • 1 3/4 cups self-rising flour
  • 2 tablespoons of sugar
  • 1 teaspoon of cinnamon
  • 2/3 cup of water
  • 1 large egg
  • 1/2 teaspoon of vanilla extract
  • 1 cup of fresh strawberries cut up
Directions:
  1. Heat the oil in a skillet (about halfway up the side.) over medium heat. 
  2. In a large bowl mix together all of the ingredients except for the strawberries. The batter should be a bit thick.
  3. Gently fold in the strawberries.
  4. Drop by large Spoonfuls into the hot oil. Be careful on to splash the oil. 
  5. Fry, turning occasionally, until golden brown, 3- 4 minutes. Remove with a slotted spoon and let drain on paper towels. 
  6. Serve with powder sugar, honey, or syrup.
