Strawberry Fritters
Strawberry Fritters are great for breakfast or any time.
Ingredients:
- Oil for frying
- 1 3/4 cups self-rising flour
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
- 2/3 cup of water
- 1 large egg
- 1/2 teaspoon of vanilla extract
- 1 cup of fresh strawberries cut up
Directions:
- Heat the oil in a skillet (about halfway up the side.) over medium heat.
- In a large bowl mix together all of the ingredients except for the strawberries. The batter should be a bit thick.
- Gently fold in the strawberries.
- Drop by large Spoonfuls into the hot oil. Be careful on to splash the oil.
- Fry, turning occasionally, until golden brown, 3- 4 minutes. Remove with a slotted spoon and let drain on paper towels.
- Serve with powder sugar, honey, or syrup.
