Apple-Cinnamon Latkes
- 2 eggs
- 3 Tbsp sugar
- 1 tsp cinnamon
- 1/3 cup water
- 3 cups chopped apples (about 3 apples)
- 1 cup self-rising flour
- 1/2 cup oil for frying
Instructions:
- Cut the apples with an apple cutter.
- Place the apples into a food processor and chop.
- Put the eggs, sugar, cinnamon, apples, flour, and water in a bowl.
- Mix well.
- Heat, over medium heat, about 2 Tbsp of oil in a frying pan.
- For each latke, spoon about 1/4 cup batter into hot oil.
- Fry until the edges are brown. Turn and fry on the other side.
- Remove from pan and let drain on a paper towel.
- Sever while warm.
Notes:
