Cactus and Scrambled Eggs
Ingredients:
- 1 cup of
Cactus (drained)
- 6 eggs
- ½ chopped
onion (optional)
- Cooking oil
Directions:
- Over medium heat with a little oil, cook the cactus until tender. 

- Beat eggs.
- When cactus is tender, add in the
eggs. Salt and pepper to taste.
- Cook until egg is done.
